Bought from Alex @ Alpine in 2019 with E85 and euro MDM additions. I never requested a map or flashed as I was moving at the time, then Covid issues, and ultimately went supercharged. Will forward info from Alpine and ship flashing cable to buyer.

Do you know if it's possible to have Alex change it to a 91 tune? Or is this a wysiwyg type of thing?

You request maps from Alex. For example, you can request a 91 Octane map (+ other options) from Alex and he will send you the files. The E85 add-on allows you to request the E85 option when requesting maps.
