So one of the previous owners of my newly acquired car wrapped the roof black and I’m hoping the paint underneath is still good. What’s the best way to remove the wrap to give the paint the best chance of remaining in tact?

Unless the owner used a questionable brand of wrap, or left the wrap on there for an extended time (Maybe 4+ years-ish), there shouldn't be any risk of the paint being damaged. Don't have any tips on removing the wrap though.
have a water boiler next to you and all you're gonna be doing is pouring hot water on the wrap and peeling lol, or rent a steamer.
Would a heat gun work or it should be a steamer of some sort?
Just yank it slowly.
Well, let it sit in the sun for a couple hours, just went for it and hoped for the best. It peeled right off. Now to source the correct roof rails.
