As far as street tires the Michelin PSS is a great option and is available (in the US) in 275, 265, 285, and 295/35/18. You have a lot of options with that tire. I just wouldn't use it on the track as it tends to not perform well in that environment.

Those sizes will work but you will need to pull your front alignment pins and max out your camber. You should be able to achieve-1.7 in the front. Rear will likely need a similar level of camber.

FI's are thinner in base near the bolts definitely won't miss that.

No rubbing. In fact I'm now running 10mm spacers in the front and 5mm in the rear.

Looks great.

I definitely see the difference in that the RI-A is closer to a "V" spoke and FI are more of a "Y" spoke.

These wheels look great in 18" though. Almost as if they are 19, due to the discrete lips.

Small difference but it's there! Great wheels either way!

Only some FI-Rs can top them, but they are crazy expensive.

No spacers and I am currently on the KW HAS. I am very very pleased with the ride quality but I think I am going to switch to the Ohlins R&T or the JRZ RSII for next spring.
