A very popular size on a 19" is 255/35f, 275/35r. I'm running that combo but will go back to OEM 245f/265r next tire change. It's not as stout looking but I prefer the feel better.

Because the consumer market likes the aesthetic of larger wheels. Porsche's have gotten bigger and bigger. The larger wheels maintain the aesthetic they desire. Same with brakes, the huge calipers and rotors need larger wheels. Note that the 20" wheels on a GT3 still have reasonable sidewall heights. Equivalent to the sidewall heights we have with 19" wheels on an e92. That being said, guess what the Porsche cup cars run???? And pretty much every race car built today? 18". There are little, if any, true racing slicks made in larger diameters. Hoosier has 19"+ R7 but those aren't true slicks.

The Porsche has 20 inch wheels but it also has a much larger overall diameter for the wheels than the M3. So the GT3 can mount taller sidewall tires even with 20" wheels. The M3 has a smaller diameter for the wheels so a 20" would need super thin tires to fit. They're different cars designed for different wheel sizes.
