I systematically went thru all the options and this is what works best for me. The microphone is external.
.
Note the EV COMP set to -2.0
This helps biased the auto light metering to the outside and the dark interior influences the light meter less

A note about the FOV
I tried Narrow and Linear.

First it does not change the Video optically, so you can record in FOV=Linear and crop to Narrow with software on the Laptop.

But how it meter the light is significantly different

The good thing about the Narrow is that most of the frame meter the light from the outside. But with mounting the GoPro on the passenger seat, it shows very little of the driver.

If you set FOV=Linear it capture the driver and the track. And you can crop later.

If you set it on FOV=Linear, you have to tell it to meter the OUTSIDE of the car so the dash and the inside of the car will be dark and the outside metered correctly.

To meter the outside, after the GoPro is turned on and position correctly....

Hold your finger on the screen until you see a big square, then lift and touch the screen again where you want the light metered.

This settings is not saved. you have to set it every time you turn on the GoPro.

So it is better to connect the GoPro to external power, set the auto shutoff to Never.
.
Do not lock the auto exposure!

It's because you can change where the spot metering position is located.

What GoPro screwed up on is not having this stupid thing being remembered from power cycle to power cycle. How hard is that?

Date and Time

This drove me crazy until I did the obvious

At the Hero 5, you can set the time in 24 hours or AM/PM format.

When it was set to 24 hours, the time on the copied-to-computer MP4 file was messed up.

Once I setup the time to 12 hours AM/PM it transferred to the computer correctly.

This allows to easier synching session times and logger times with the video times

To be safe, I also setup the date to MM.DD.YY format.
