What shocks/struts should I get to go with the Dinan coils?
My car is a ZCP with the Dinan Stage 1 coils. The ride is comfortable on the highway but its a little rough on the street. No over bounce but I definitely notice the bumps. I believe that the lowered ride height has the dampers a bit below their sweet spot @ static height. I'd like to keep EDC. What shocks and struts can I use with these coils to get better ride quality?

I believe they were designed to complement the oem shocks. The Dinan coils are such a minor drop i doubt you'll notice a difference replacing with an aftermarket shock
How many miles do you have?

I think you're boned unless you go to the Bilstein damptronic or similar, and then you might as well sell the Dinan setup and get something which you can tailor your rates how you like it and comes with good damping as part of the pacakge

I tried searching Bilstein "damptronic" and all I could find was coilovers. Don't they make "damptronic" shocks and struts without going to coilovers?

Keep OEM or go coilovers and ditch the dinan springs

Is it just the springs or full stage 1 kit? It should come with smaller bump stops and modified top mounts to retain the suspension travel. I guess you could get Moton, MCS , JRZ etc. custom valved for softer springs which would give you a more sophisticated damper setup but it loses EDC. For the street I don't think there is much better than OEM, you could also try going back to ZCP springs.

Jack the front side up, you should be able to see the bump stop pretty easily which will give you a good idea if it has it or not. Infact I can see my bump stops without jacking up the car but its stock height.
