I just used "Sticky Citrus" by the Chemical Guys and it worked extremely well. I have the OEM hyper silver 359s and brake dust is easily noticeable on them. The sticky citrus breaks down the brake dust so well I was so pissed I didn't try it when I had my 666s on my F80. My only gripe is that a bottle goes by so fast. I used almost 1/2 a bottle in one cleaning session. But I was also spraying it liberally. I'm going to order more from amazon tomorrow. The smell is also a highlight as well.

Does it change the color when it hits brake dust?

buy a gallon of P&S brake buster, it can be diluted 1:5 so its extremely economical to use and its very effective!

It doesn't change color and I find that it has also helped keep the brake dust from scattering all over the wheel. I'm not sure how to describe the "defensive" property that it appears to have as well.

I'm pretty sure you're supposed to allow the cleaner to sit on the wheel for a few minutes, turns purple, then scrub and rinse.

Correct, it takes a minute or two for the product to fully work.

I've been using Iron-X LS (the "lemon" scent) for years on my wheels. Works wonderfully.

I hardly use products with thyoglycolic acid (the active part of what makes those cleaners "bleed" and smell like an old lady's perm) components unless the wheels are caked up pretty bad and have some baked on contaminants. I've found that P&S Brake Buster works awesome 9 time out of 10 for regular maintenance washes. In addition to working well it's pretty darn cheap too.
