Can someone tell me the best/safest way to get this sensor off?

Blue circle (21)
There are two clips that just lock onto the sensor and it seems like the best way is to just use a flat head to pry both sides open and have a second person take out the sensor, but I don't want to risk breaking these fragile things so if anyone can tell me a better idea

The way you mentioned is the best way.

I usually put a small screwdriver or pick in each side, then pull it lose. Those connectors are a little more flexible. As long as you aren't prying on it too hard it will not break.
