I think "cutting" the roof off is not really descriptive of the procedure. AFAIK (from E46 M3 and Z4M coupe) the roof is held on with some bolts and glue. Once you take out the ceiling, you unscrew the bolts then use something like piano wire to separate the roof from the glue. It is something you can do yourself but you should research up on it first. It is better to have others around to help, especially if one of them has had experience.

You'd think BMW would offer this with the way they hyped up the CF roof for the coupe.

for the e46 m3, the roof sheet is spot welded on, i think some 120+ points. after you drill out the welds, the roof comes right off!

That's a BIG question in my book. Also what if there is a water or rain leak? Concerns there too....

What does one do for those M3 sedan owners who want to retain their sunroofs?

Glad I got a M3 coupe by the way...but interesting option for those M3 sedan owners!
i would think the e90s without sunroof would have a roof bow that gave support. but like any other mods, brakes, bucket seats, i think if an accident happened someone was injured, the insurance company could deny the claims.

120+? That'll be fun. I think every drilled hole will feel painful.

But yeah, I can't wait to see it too. Someone with a sedan, do it!!!
