EGT Question...?

I have a few questions. As far as the EGT temperature... First, where is the DME/ECU reading this info? I am thinking it's the O2 sensor. 2nd. What's the max temperature range before the ECU intervenes. What would be the range with an SC without cats? I have a data display that has temperature values that can be set, if that value is reached it would give a warning. I have seen temps between 800f to 1500f. Just want to be in the correct ballpark when setting the max temp before a warning.
