How do you know the caliper is flexing?

Seems like an odd comparison to put a brand new performance pad up against a worn down OEM pad. I have run DS2500s on several cars and never noticed anything like that.

I had a friend pushing the pedal when I was bleeding the brakes - idk if "flexing" is 100% the right word. The caliper is visibly twisting/turning about 1-2mm when the brake pedal is pressed. It turns in the direction inward toward the car, on the driver's side counter clockwise looking from above, passenger's side clockwise from above, around the pads.

It wasn't for comparison, I was trying to isolate where the soft pedal was coming from, and I tried putting the stock pads back to see if that made a difference - and it did. It might possibly by the nubs on the back of the DS2500s making contact with the caliper body, I wasn't really checking the last time I had them out but will next time - though again, it looks like there is enough space and I'm just reaching for answers at this point.

The OEM calipers will flex a bit. That's the problem with a sliding design like that.

You're not the only one that's felt that coming from stock pads to performance pads, at least on BMW's. I've had this happen on both my E46 330ci and my current M3. After switching from stock pads to EBC Yellowstuff pads, and then the Ferodos, I noticed the brake pedal felt more "spongy" for both the EBC's and the Ferodos, like there was air in the lines, even though I never opened up the fluid system. Even after bleeding the brakes thoroughly I just accepted that's how performance pads feel. They have gotten better over time though, it's just weird why they feel like that.
