Track prep ?s

Putting on track pads - Do I need to open up the brake fluid reservoir in order to push the calipers back to get the brand new track pads in?

Steering fluid spillover - I recall seeing some zip tie a rag over their steering fluid reservoir. Is this still recommended?

Recommended tire pressures?

Psi depends on tires and how hard you push them. No you don't have to open the brake res.

Yes, rag and zip tie over power steering res works well, but unless you're on sticky tires pushing hard you likely won't have an issue if you don't cover it.
