For those interested in replacing parts on their M3 with the exact original equipment (OE) parts, less the BMW stamp and with no sacrifice in quality, here is the list I was able to put together from various posts, with help from other forum members and personal experience. For the most common maintenance items, there can be multiple suppliers at once such as Mann and Mahle. The parts are functionally identical but sometimes the packaging or minutia can be different. Similarly, some of these big OEM suppliers have multiple sub-divisions as you alluded to (Wix, Hastings, Baldwin, etc).

In the end, as long as you buy from one of the big OEM suppliers, you should be fine. I have used a variety of those brands over the years on my BMW and on previous cars and there has never been an issue with fitment or performance.

Brake wear sensors: I have used multiple different brands such as Bowa, Vemo, Febi, Bremmen, and ATE. They are all identical other than different colors for some of the connectors or wires. It's a pretty simple part used by tons of BMWs so I would just get whatever is cheapest. Heck, local auto parts stores typically have them in stock or can get them within a day. I suspect BMW uses multiple suppliers since this is a common maintenance item for all of their cars.

Brake pads: Textar/Pagid and Jurid supply OEM pads to BMW. The specific ones you got from the factory versus the parts counter may vary, especially over the years. Front and rears might not even be the same supplier.

Brake fluid: OEM is probably Pentosin or Continental/ATE, both are huge OEM suppliers.

I can always find at least two or three auto parts stores within a few minutes of me that have them in stock. Extremely common part.

I'd like to know this as well, if it exits. In the meantime, if anyone has any common torque specs to contribute I'd like to add them to the commonly used torque spec list in this thread here.

Heads up that BMW E9X M3 post-cat oxygen sensor Bosch 16793 has been superceded by Bosch 16421

I just installed 16421 on my car and it works fine. They look identical as well.
