I would appreciate some assistance w/tire sizing

I'd like to place my order for tires today. Car is an E90. My rim sizes are 19x8.5 et30 and 19x10.5 et25. I will be dropped (at some point) on GC coilovers w/their camber kit. I'm looking to buy a set of Vredesteins, and would like to have as wide a track as possible (285 OR 295) w/out rubbing and without disturbing the handling characteristics of the car too much. So my questions are as follows:

1) I'd like to flush the rim, but I'm concerned about rubbing. Should I get spacers, and if so, what size?

2) Given my desire for a wide rear track, what front size could I feasibly run while maintaining handling.
