Repeated heat-cycling will change the color. You're pretty much baking the finish. My Corvette's factory Brembos went from bright red to more of a maroon after about a year of track events.
Go for silver or black if you will be tracking it. My black StopTechs looked the same even after a year, only visible change was that the StopTech logo had turned slightly yellow from the heat.
Then again, if you're not tracking the car, the color should never change. Given that the calipers are not directly next to the paint, a slight difference in the shade of red probably won't even be noticeable. Maybe you can find someone locally with the red StopTechs and see for yourself?
