If the damage to the rear quarter panel is slight, repairing it is the answer. If it is mangled (which it doesn't sound like it is), it should be replaced. It is a HUGE and expensive job to remove and replace the rear quarter panel since it is a spot welded component of the unibody.

I'm not sure how things work in Spain but if you really want it replaced and the other guy's insurance is picking up the bill, you can definitely push for that. On the other hand, you say that you are leery of body shops (likely for good reason) and I personally would not want a body shop I didn't trust doing major surgery on the unibody. I'd rather have them repair it and I'd monitor the progress to ensure they are doing it properly and using little to no body filler.
