Find a local race shop that stocks lots of seats. Go sit in them all...for like 20 minutes each. And yes, if you're going to run harnesses, get a HNR.

It will look stretched versus a 10", yes. Supporting the tire is key and a 10.5" on a 275 isn't too bad. Nitto shows you can run up to an 11" wheel on a 275-width NT01, for example.
