I just got done running a 19x9 +28 up front with 275/30 V12's and got slight rubbing of the fender well under strut compression during a turn but that didn't bother me too much.
My main concern is about avoiding chewing up the paint on the fender or contacting any suspension components behind the wheel as well.
Do you recommend the spacer in the rear due to proximity to the spring?

Yes for the rear, with those tires you may need to do a test fit with/without spacers and check inside clearance. It will be close but should still work.
