I don't think it has to do with the seat position as I'm comfortably putting my hands around the center of the steering wheel. It appears the issue seems to be paddles being too close to the center hub rather than being on the outer edge of the steering wheel. It is impossible to reach them coming out of a corner full throttle so I find myself using shift knob.
