Congrats on the new-to-you M3! The 285/30-19 tire on a 19x10.5" wheel is right on track with our recommendation. Moving to a smaller 275mm tire will actually increase fender gap since this tire size would be stretching over a 10.5" wheel. The 275/35-19 is going to be a fair bit taller than the 285/30-19, albeit with some stretch to the sidewalls.

I have listed tire heights respectively below:

275/35-19: 26.6"
285/30-19: 25.7"

It is also important to note that the 275/35-19 can work but is not ideal when mounted on a 19x10.5" wheel. We would recommend sticking with the the 285/30-19 for this application.
