I think it really depends, we have seem many cars come back for a different tune that they were running and some of the parameters were in the area which we would never touch. Some tuners (like ourselves) want to be able to provide customers with nice gains, but not lose drivability and do anything that will potentially damage the customers cars. I guess its really on what you are willing to give up for the gains you will get
