You can turn it off by hitting the button, or set it to stay off in Sport + mode. But "coding" is required to have the car automatically start in Sport + mode, to make it feel like the feature is truly disabled (such that you never need to hit the button again).
After coding, yes, the change is held.
For warranty, it's unlikely it'll violate anything. Certainly if your wheel falls off they can't blame the coding. If your ECU were to fail for some reason then sure, they might deny that as a warranty fix. Like anything it's a gamble. Most would say a small or negligible gamble, me included, but there's always some amount of risk.
