The speed of V730s does not fall off. I've been running them for the last 2 years and have used them for time attack competitions. I can get consistent lap times right until they start cording.
That being said, as others have pointed out, it is not the fastest tire. RE71 is noticeably faster, same with CR-S, A052, SC3/R, etc. But I can usually get 8-10 track events in on them, and in that regard I think they are king for the endurance 200tw category. In my eyes, they've completely replaced the NT01 (they're cheaper and faster).
They are not meant for the rain, and have little resistance to hydroplaning. Unless you intend on practicing car control, I don't recommend it. Other than that, if you want a budget friendly endurance tire that you can use for an entire season, the v730 is your friend.
