The base fuel is often the same, but brands often add their own additives at/after picking up. The additives can make a big difference. So, yes, the fuel is almost completely the same by volume, but the performance difference can be significant, especially over time.

They all have detergents, but they don't all have the same level or quality of detergents. Some brands just barely meet the federally mandated minimum; others adhere to Top Tier Gas standards, which are much higher; a few go beyond even that.
You're right that none of this matters as much as whether the gas is stale or contaminated.
