Back-pressure is never desired in any ICE.

What is desired is exhaust scavenging and anti-reversion.

Having oil temps at 210F is perfect. Oil temps need to ideally be hot enough to boil water and cool enough to maintain viscosity. If there is question on excess oil temps, you can verify if your oil cooler t-stat is functioning by physically touching the oil cooler and determining if hot oil is flowing thru it via being hot to the touch.
