Korčula salad
Croatian couscous salad

This is in our regular rotation. We first had it in the old town of Korčula, Croatia. The menu listed it as “couscous salad” but it is so much more. Fresh, sweet, savory and tangy. A great combination of flavors and textures.

Couscous
Parsley
Cantaloupe
Chickpeas
Onion
Tomato
Shallot (optional, I had one in the fridge)
Almonds
Feta (Croatian Sir cheese is authentic, I had feta available)
EVOO
Lemon juice
Salt
Pepper
Sumac and cumin are my additions
No olive - the missus isn’t a fan!
