Disclaimer, I coach with most of the below except Pro Drive including working as a paid coach.
ProDrive, Hooked on Driving, and Cascade Sports Car Club all offer excellent Novice programs. All three include some level of out of car instruction + in car instruction throughout the day. HOD and CSCC have Zoom meetings the week leading up to the event for first timers.

Portland BMW Club also offers novice groups with a paired instructor, it's a bit more laid back but still a great offering. The other 3 listed above are a bit more structured for novices. Their sign ups are also on MSR:

I would steer clear of Track Night in America. They do not offer instruction, no vetting of driver skills for run group assignments, etc. I've been there a few times, and #noped right the fuck out of that.
