Do you have a pic of the oil thermostat in the oil filter housing? Sometimes you can see if it's not opening fully, like it's wedged in there.
Yea I do have a photo. I'll update the thread with the whole install. I actually tried pushing it open and no luck. I thought maybe I'm not squeezing or pushing hard enough because I was able to compress the coolant thermostat. It wasn't wedged, it came out easily but I did notice a crimp in the center of the thermostat. Not sure if that normal.

Anyway I installed the VAC diverter valve and with 75F weather AC on freeway driving mild traffic oil temps stayed below 210. Will report coolant temp from my drove home later on.
