Some cars do seem to run quieter on certain oils. The oil chemistry is different, and in the above example, you have two oils that have very different viscosity curves.
There was a lot of discussion on this at Bob Is The Oil Guy and I believe there is at least one SAE paper on it. The consensus is that small acoustic changes from oil are normal and don't indicate a problem (or lack of one).
