Large meat lovers pizza, from that place about 45 minutes away that made the infamous belly-bomber stuffed ziti pizza a few weeks ago. They did pretty good on a normal pizza. Had two slices, and put the other two from my half of the pie away for breakfast.....

No pics, but my wife's excellent enchiladas. Had some leftover taco meat and she got 15 enchiladas. Some were just cheese as those are her favorite. I have issues with a lot of cheddar cheese, so I have to stick with meat & jack cheese.
Marinated Flank Steak, Roasted Corn Pancetta, Budin de Calabacitas, and homemade Tomatillo Salsa.

Saturday pizza. Since I really enjoyed my franken ziti last week, I searched recipes on the internet for variations on the theme. For one thing, Ziti was never intended to be a pizza but a cheesy casserole or bake. The ziti pizza was an Italian-American concoction which was simply known as pasta pizza. You can use whatever pasta you have on hand. Further research unveiled that the casserole was originally made with broken pieces of various types of pasta. Waste not, want not. And then became a favorite at family gatherings,

Mine today is a Ragù version made with broken (On purpose) spaghetti pieces. With Ricotta, grated parmesan topped with Mozza.

My tummy had a happy.

Well, this might come as a surprise but after I joined the Navy I mainly lived on Pizza, Burger and Red wine.

~258 full moons later I got married and the cook doesn't like soggy bread. So there you have it
