I think it's more about taking your eyes off the road to point the camera than it is hands off the wheel. A shift can be done almost reflexly in less than a second, while getting a camera, holding it position and snapping a pic would take more concentration and time.

I definitely agree with that. I was specifically addressing the one handed thing.
