Depends on if your Wife really wants to improve her driving skills. The first day you learn alot. The second day you "hone" what your learned and take it to the next level.
If she loves driving, she will be happy with either opportunity but the 2 day will be amazing! OP: Nice gift!

do the two days. Perf center was def one of the top 5 coolest places I attended. The school is just a added bonus. You will have a blast I promise

Why don't people just join their local BMWCCA for track events?
I just don't get it. I have a few friends with /M cars and NONE want to take it out on the track???? .

Let me get this straight... You are swapping out parts designed by some of the top engineers in the world because some guys sponsored by a company told you it's "better??" But when you ask the same guy about tracking, "oh no, I have a kid now" or "I just detailed my car." or "i just got new tires."

If you do 2 days, don't plan on doing too much the evening after the first day other than dinner. She will be exhausted. They don't cheat you out of any driving time. It's a full day, and you will be tired when it's done. And it starts again first thing the next morning, and as someone mentioned, you will probably be sore the next day.
I've done both the one day and the two day. Definitely recommend the two day. The track layout at the end of the first day is a shorter version of the end of the two day event. Two day event ends with full lapping on the longest layout. Higher speeds, more fun. And there are other exorcises they cover in the two day that they don't in the one day, so it's more than just twice as much seat time, it's more stuff that is covered.

Of course the 2 Day school is better. You get more instruction, more seat time in the car, along with all the amenities. I highly recommend doing 2 days. I went with the 2 day as well for all the reasons previously listed and because I thought going all the way to SC for 1 day seemed hardly worth it.

Something I wanted to do. Could I have gone to a BMW CCA hosted event? Sure. But I doubt it would have been as exhilarating and accommodating experience as M School, especially driving different variants of M cars, which CCA events cannot do, unless someone loans you their car. Lastly, even if you don't go, or rarely go to the track, doesn't mean you can't own a M car. I'm sure there are others that have M cars and don't track at all. As for myself, my schedule is pretty busy, and once the timing is right, I do hope to go to the track.
