I think you meant 275/35/19. 275/30/19 is a smaller side-wall / overall diameter than necessary and there is no reason to reduce the side-wall height / overall diameter in the rear.

No. I meant 275/30/19 it's a better match to 255/35/19 when you do the ratios of diameters to remove DSC issues.

I'm going off the ratios of THE GTS SIZES not stock. Do the math. I also have different programming to match.

Does the OP have an M3 GTS or the M3 GTS programming? If not why are you telling him or anyone to go with that size for DSC issues? Moreover I have heard of GTS DCT software and Euro MDM software updates but I have not heard of M3 GTS DSC software updates. As far as I know, Euro MDM is not the same as GTS DSC / MDM software. Euro MDM would be designed for the european M3 which has the same OEM tire sizes as the US M3. Are you saying that you have the M3 GTS DSC / MDM software?

If you have a 10.5 inch rear wheel, would a 275 be too stretched? I am contemplating the CH-R in 19x9 et25 and 19x10.5 et20 and was thinking of either 255/275 or 255/295. My concern with 275 is that the rear wheel will look stretched while my concern with the 295 is that there will be a 40mm stagger vs the stock 20mm.
Any advice?

I would run a 12mm spacer in the front but it probably won't be necessary unless you have KW suspension. 275/30/19 and 295/30/19 which will sit very square front and rear. This would be my preference but you will need some negative camber and spacer in the front (15mm spacer for KW suspension and 12mm spacer for all other suspensions).
