and it looks like the pedestrian stopped walking when he saw the car coming... def had plenty of time to get out of the way if he cared to look up...

1. Pedestrians always have the right of way.

2. The M3 driver had at least 5 or 6 seconds to stop.

3. The M3 driver was racing.

The fact the pedestrian was jaywalking matters, but it's unimportant next to these other things. Especially #2 and #3.

Do you seriously expect to not go to jail if you hit a pedestrian while street racing because they're jaywalking?

That is one heck of an affirmative defense.

It's extremely hard to judge how fast something is coming at you head-on. Not really his fault.....people cross at red lights all the time.
