I think BWM makes the quietest...it's called OEM. I have one in my garage if you are interested. It is made from the heaviest metal on earth (depleted uranium I think). I will be willing to let it go for $3,000.
For quietness, you would want a slip on, and I believe Akrapovic is probably up there for quietness. I haven't really heard too many others to give an informed judgement, and every one seems to have their own idea what constitutes loud and quiet. Looking for the quietest exhaust is an unusual question....is the wife bitching? EDIT: Dammit, JO8M3 beat me too it.

I amongst others have an OEM set of cans sitting around that is of no use. Try and find someone local for convenience.

Akra's going to wake your neighbors on cold start-up.

if you want quiet why change from stock? How much of a whp increase are you all actually seeing on a stock m3 w a typical slip on?
I have a custom SS exhaust on my M3 which is catless, 3" all the way back, 2 magnaflow mufflers and a Vibrant ultra quiet resonator. This is on a 6 cyl but its still pretty loud. If you want quiet exhaust, stay with stock.

Innotech axleback with the valve closed is quieter than stock. With the valve open, it's a little louder than a slip on Akra...
