I'm getting a slight rub with the stock PS2's due to a recent mod...wondering if going to wider 30 sidewall tires would eliminate the rub.

What tire will have more wheel well clearance on the front drivers side by virtue of how its stretched over the rim.

245/35/19 PS2's or 265/30/19 PSS's?

The OD of the 265/30 is 25.3", compared to 25.8 for the 245/35. It depends on whether the clearance issue is related to diameter or width. I have 275/35-18 on the front of a stock ZCP suspension with no clearance issues. The OD is 25.6, and my wheel is 10" with 25 offset.

I'm thinking that diameter is unfortunately the problem since the rub is happening when the steering is nearly locked all the way to the right....wider tire = even deeper edge rub as the wheel turns despite the slightly lower OD.

I guess I gotta figure out the fender issue...vs taking the easy route of new tires.

The issue in the front is due to OD, not width.

Go with a 265/30 if you want and you'll be fine.
Make sure to match the specs closely to your rear wheel, though.

265/30 front and a 265/35 rear might not be the best idea.
I'm assuming you're on stock rims? If so, a 285/30 would be better in the rear.
