Pressure depends on car weight and suspension setup.

You typically run higher pressures for those who are camber challenged at stock weight. Probably closer to 40psi.

If you can add negative camber up front, 36-38psi would be ideal.

Once you start taking out weight, you can start dropping pressures. Which will help the tire to last longer as well.

Cold temps will depend on a few things, but I typically basleline at 29 cold and aim to hit 36 hot.

R-S3 experience

Have had good long term wear with this tire. They do need a few 3-4 minutes to warm up. I have experimented with cold pressures throughout the day and long (30 minute) sessions with the other factors - track, ambient temp., suspension settings, driver - being as constant as possible.

Across 4 track days (200 laps) under similar conditions my best times were achieved starting with cold 30/31 and achieving hot temp of 36. This was the sweet spot for me and I have experienced hot temps all the way up to 41.

Still pretty new at this, but I also agree your other settings can heavily influence temps. For example, if you're seeing uneven tire wear you will likely be generating more heat and might see benefits/lower temps from a camber/toe adjustment.
