Queso or salsa recipes.

Tex mex is probably my favorite food. Salsa and queso at Texas restaurants is the best (Californians need not argue otherwise). Anyone willing to share their recipe for either salsa or queso?
I saw this recipe and want to make it this weekend, though prefer no beef in mine.

Much prefer cali mex > tex mex. Queso is basically nacho cheese, kinda grew out of that as a teen. Salsa on the other hand is rad and there are loads of different styles. I like verde with lots of lime and cilantro notes and a little kick.

But tex mex is popular - and the occasional Chuy's is fun for our kids.

3 Roma, diced
2 tomatillos, similarly diced
2 jalapenos, diced finer
1 serrano, diced fine
cilantro, about 1/3 head, roughly cut

mix, add a bit of pink salt, enjoy!

I prefer mine chunky, and this is actually more like pico de gallo.


My wife does a similar bit but puts all the fruits on a hot plate to roast the skin, then in a plastic bag to make the skin come off. It all goes into the blender for about 5 minutes, sometimes she adds in garlic. Depends on how mad she is with me whether this can be eaten straight out the blender, or needs time/salt to cool off.
