Tire sizing question

Currently im looking into upsizing by one on a new setup

275/35/19R & 255/35/19F which would keep the ratio's the same as stock.

But im also considering this setup

275/35/19R & 245/35/19F

In what way would the characteristics of the car change? Would I experience slightly more understeer? Would the changes even be noticeable?

These will be on oem 19".

Whats biggest I can fit on the oem 19" front and rear?

275 & 255 will keep more of the stock F/R balance, but it's not something you will probably notice except on the track. The stock 245 will be better in wet conditions.

IMO, I would stay in OEM size if you are using stock wheels.

I've been running the 255/275 setup you have in mind on my 19" OEM rims for some time. They are also my wet track backup and I've used them as such on a couple of fays. It works well. I wouldn't go any wider on OEM rims.
