no matter who stole it, still your fault for being irresponsible w/ that amount of money. Why would you leave that much laying around and in two diff places, seriously who does that?

take it as a life lesson, it just costed you $600 to find out your GF is a thief and you need to tighten up your game. If you are gonna be that irresponsible, invest in a camera

If you're already at this point, there's no reason for her to be the gf anymore. If you're that suspicious of her, there are obviously massive relationship-busting trust issues there.

Don't bother with the camera. Ask her if she took the money. If you don't know for sure she didn't, kick her to the curb.

Have you asked if your sister had any friends over? Maybe someone she brought in the house stole it. I would ask family if they seen it first or if they've invited anyone over lately. GF does seem like the prime suspect, but easily could have been something else.

Coming form someone with several life experiences like this if you seriously suspect it was the GF then you really need to end it now. That kind of a trust issue just can't be overcome in the long run. As far the sting kind of deal all that will prove is your suspicion is correct, you won't get your $600 back and not much else positive will come of it. You could just drop some hints but if she goes off on you again all that confirms is your suspicion is correct. As far as the comment about seeing her so much your a wuss etc I just don't get that line of thinking, if you enjoy someones company and truly respect and love them who cares how often you seem them. Oh and word of caution any time you have joint accounts, not the situation here, there's nothing you can do if someone drains the account. I learned that one the hard way with the ex wifey.
