Just to clarify, only the underside of the dash, not the top. There was no option to have a leather covered dash on the E9x.

This. And only the sides of the center console (aka transmission tunnel) are covered in leather, not the top surface where the iDrive controller and such are. If you don't get it, these two areas will be that black textured material you see on the top of the dash of any M3. Therefore extended leather makes more of an aesthetic difference when your interior leather is a color other than black, but some people swear by having extended leather even with a black interior.

Just google it, plenty of images out there showing the difference between the two.

Not very rare, lots of people opted for that.

I was told the black textured material around the shifter area on top of the console IS leather (standard on all Epx M3s).

It might be, but the top of the console is the same whether you have standard or extended leather. The black textured material on top of the DASH, however, is not leather (again, regardless of whether you have regular or extended leather) and that same material is used on the sides of the console in cars with regular leather.
