Let me get this straight... You are swapping out parts designed by some of the top engineers in the world because some guys sponsored by a company told you it's "better??" But when you ask the same guy about tracking, "oh no, I have a kid now" or "I just detailed my car." or "i just got new tires."

Prob going to use a 275 PSS on the 11 because it fits like a 285

That's crazy, unless you want that stretched look. A 275 is perfect for a 9.5 to 10" rim
I have 275/30 on a 9.5" rim up front and these 295/30 fit perfect on the 10.5 in back but the wheel offset doesn't work by a few mm, so I had to switch to a 285/30 and it's a little stretched. If you're going to put a 275 on a 11" rim, it's going to be really stretched.

Honestly I think it won't look much stretched. a 285 hankook would look more stretched than a 275 michelin

Ended up buying 255/35 and 275/30 PSS. The rears had enough room for a 285 but I thought it wouldn't with the offset being 22. But it's all good. Here's the stretch with a 255 on a 9.5 and a 275 on a 11. The front isn't bad but you can notice some on the rear

Like I said, the 275/30 would fit perfectly up front. It's on my 9.5" front wheel now.
Unless you like the stretched look.
