Tire Damage
I hit a curb, it was unavoidable, and my tire took a pretty good beating along with the wheel. I'm unsure as to whether or not it's damaged enough to buy a new one. This set is about done; they might have another 2000 miles on them. Would I be safe waiting it out, or should I go ahead and replace this one?

*probably* ok for street use. If you go on the race track, I would swap it out. Anything on the sidewall makes me nervous if you're running hard.

I've been going extra slow around right-hand corners to keep stress off the sidewall. It scares me too.

What you chopped off is the "rim protection" rubber on your tire. There are no exposed metal wires that provide the structural integrity of the tire so IMO everything is fine for every street use case.
If you inspect it regularly you will be fine until you get a new set.
