I have to agree that 80% of the braking is done in the front but if you are going to go with a Brembo 380 front why would you not go with a 380 rear? You can always go with the smaller front and rear caliper and run 18's if that is what you are looking to do.

As for Stoptech the 355mm is the biggest you can get in rear the last time I checked. I bet if they did have a 380mm rear they would be on your car . Just having fun with you.

My opinion is to do what you like as you have to live with it.
