The beaches are actually awesome. Very clear water and very clean. We did stay in a crowded area though, and the waves were small obviously.
If you are looking for more secluded beaches, I would go to either Kawaii or Lanai.
If you are looking for waves, the backside of Maui is really nice, and I think there are some great spots on the big island of Hawaii.

Lanikia Beach on the east side of Oahu is the most scenic white sand beach on the islands (most say). Was there in SU 2011, stunning.
Kauai is where most local Hawaiians go on vacation from what I understand because its not as populated.
If you want surfing... well just go anywhere down there because it's all over the place. You just need to go at the right time of the year which is late October thru March. North Shore of Oahu is huge (Pipeline is the most famous), Maui has Jaws which is basically unrideable unless you tow into it. Pretty much any beach with northern/western exposure will get big with the winter swells.
