The 275/35/18 would work great on all 4 corners of your M3. I'd run 4 rears (the wider rim) to get the full width of the tire on the track.
There are plenty of high horse cars running that size in the Professional Grand Am series without a problem. It fits 9-11'' rim and sticks 4-600 horsepower cars like glue.
The size is popular so availability is easy.
I would say that a good majority of E46 and E90 M3 racers are running an 18'' rim and an even greater number are running a 275/35/18.
