I was just thinking about this. Alcantara headliner and HUD are the only two things the M5 has that I wished I could've ordered on the M3. My only concern is that such aftermarket upholstering will surely present uncertainties as to how the side-curtain airbags will deploy in the event of a crash. Hopefully this will be never be an issue but it is a safety concern and a risk you take.
I was quoted $1800 for my RS4 by a reputable shop a couple of years ago, so I'm thinking I'd get a similar quote for my moonroof-less M3. I suspect having a moonroof will cost more due to the increased labor of doing the inner retractable panel.
