I can't comment on understeer, but I can comment on the tire sizes. I tried installing BFG KDW 255/35/19 and 285/35/19 tires on a set of 19x8.5 and 19x10 wheels with an offset of ET15 on the front and rear. The car is currently at stock ride height, and the tires would not clear on the front or rear. I know that the offset is aggressive, but it was rubbing bad enough on the front that it was melting the inner fender liner when I turned. For the rear, it would rub when I went over bumps. I drove the wheels and tires a whopping 5 miles before pulling them off. I'm told that the larger tires combined with the offset is what killed me. With a less aggressive offset, they may clear.
I will have some pics up later today of the setup on the Linea Corse Dyna wheels, so look for the thread! FYI, I'm selling the tires for $800 if you're looking for a set. I'm going to try a less aggressive setup to see how that works.
