I Agree, the CF roof is so much nicer than the sunroof but....
I was at the same situation as you are, I found a 2010 M3 with all the options I wanted but it had a sunroof instead of the CF that I really wanted.
It didnt break the deal for me because it was such a great deal.
I got a 2010 M3 with premium and tech package with 22k miles for 52,500.
I couldnt say no !
