Based on your experience for the track I'm thinking front -2.75, rear -2.75

I run -2.8 front and -1.8 rear. It is a compromise for street and track.
I use dedicated track wheels (Nitto NT01 275/35-18 square) and use Michelin PSS (19" 255/35 275/35) for DD and wet track. I do not want to change the camber setting even if it easy to do so with the GC camber plates as it does affect toe. And toe has a bigger impact on tire wear than camber on the street.
